It’s summer time and that urge to cool off with an icy treat is inevitable.
I’m always trying new recipes to replace store-bought sweets and snacks with healthier homemade alternatives and this orange creaminess recipe is a real winner!
Unlike store-bought Popsicle and ice cream, these aren’t empty calories loaded with processed sugars and artificial sweeteners, colors and flavors.
Instead, the coconut milk, honey and fresh orange juice offer nutritional benefits… AND they taste really good. A win-win situation.
So go ahead and enjoy these guilt-free treats to keep you and your family cool this summer!
Ingredients:
- 1 1/4 cup orange juice, freshly squeezed (about 4 to 5 oranges depending on their size)
- 1 cup coconut milk**
- 3 tsp honey
- 1/2 tsp vanilla extract
**If you don’t like the taste of coconut, give it a try first. I wasn’t sure if my kids would like it either, but the coconut milk mixed with orange and vanilla really gives it that creamy orange vanilla flavor just like the real deal so give it a try before substituting with another type of milk.
Directions:
1. Mix all of the ingredients together in a bowl and pour into Popsicle molds.
2. Place in the freezer for 24 hours et voila!
